Saturday: Cooking Edition

We decided to cook as a family today so Braden was in charge of the Olive Garden Salad, Luke decided on veggie lasagna and breadsticks.
And Mady made Acai bowls with toasted granola, coconut, almonds, banana, and chocolate chips for dessert (yum!) and it all paired amazingly with a Costco Cabernet Sauvignon (for the hubs and I anyway). 

I also threw together a scratch carrot cake in the midst of this. I tweaked my aunt's recipe for a healthier version. Fingers crossed that it tastes super yummy for our family dinner tomorrow night!

This morning was 11 miles 
Hence, eating like a madwoman today! 😜

We will probably have to stream church again tomorrow because now the youngest seems to have the virus that Mady had! Boo!

Okay, this one is a little longer. I'm making my aunt's famous carrot cake. I haven't had it since she made it before she passed away in 2012. I get emotional just thinking about it. I miss her every day. I'm making it for my dad's 74th birthday. I almost didn't because we have been so busy lately. My dad isn't in good health and this could very well be his last birthday with us and he wants a carrot cake so I am making him a carrot cake. I'm so thankful that I have the opportunity to serve someone even if it's just in the form of a carrot cake.

On that note, have an unbelievably amazing weekend!!

Can't sleep, so I might as well blog!

22 miles last week:
We held off on our long run until Monday before work so that we could sleep in on Sunday after bunco and it was heavenly. We got out of bed around 8:30 and drank coffee and read our bibles outside after it had rained the night before.
Then the hubs smoked some veggies, tri tip, and chicken for our family lunch. Yay for leftovers and easy meal prep!!
#nationalpetday was this week :)
And I finally got my hair done after almost a year of not having it professionally colored. 
And now I twiddle my thumbs for the next 45 minutes while I wait for the hubs to wake up so we can get our run on. Thank goodness it's Wednesday, the rest of my school year is planned out and tonight is date night!!

My week in pics

Grading and meal planning while Mady got her braces started.
Beyond excited that the freezers are fixed at my local grocery store and they have Umpqua frozen yogurt again!
It was a good grocery week!!

And I remembered why I love oatmeal! I've been mixing a tbsp of pb2 and it's awesomesauce!

We have a 5k planned with the middle tomorrow and our regularly scheduled 9 miles and family lunch on Sunday. I'm hoping it waits to rain hard until after we run!

Randomness :)

It's spring it's spring!! This called for a lunchtime walk on Friday afternoon :)
And how funny is this hashtag covered truck. It was on April Fool's Day and I believe it was also her birthday.
I feel like I am getting a hold on my sleeping (thank God!!) A coworker even commented that I seemed more like myself last week, which makes me happy and sad all at the same time. 

We went and saw God's Not Dead 2 Friday night with our local radio station and Mady won 2 free buffet tickets to a local (awesome) restaurant and Braden won a bible study guide to go with the movie. Lucky ducks. 

Saturday we helped some friends clean their rental and then swam (yay spring!) for a few hours and I made zoodles for the first time
1 tbsp evoo
5 zucchini
2 oz low fat cream cheese
2 tbsp fat free Greek yogurt
2 tbsp Parmesan (+ some to top it)

Heat evoo. Throw in spiralized zucchini. Cook for 5 minutes. Plate the zucchini. Mix the rest of the ingredients in your already warm pan and top off your zoodles. Add more Parmesan. Done :) And literally 5 ingredients.  

Workout week:
Monday: 4 miles 
Tuesday: 4 miles + 30 min strength
Wed: 4 miles + abs/push-ups
Thursday: 3 miles + stretching
Friday: I cannot remember for the life of me ;) I'm guessing 3 mile warm up + 30 min of strength.
Sat: 8 miles
Sun: 2 mile warm up + upper body/abs/push-ups

*I usually take Sunday off but my running partner from long ago was visiting so I of course had to sneak in a work out with her!
